Recipe: Raw Candy

These treats are deliciously healthy, satisfying and sweet. They take a little bit of prep time but the result of having a stash of raw candy is worth it.

Ingredients:

1 cup flaxseeds

1 cup coconut (desiccated or threads)

1/2 cup sunflower seeds

1/2 cup pumpkin seeds

2 cups of dates

2 tablespoons Coconut oil

Dash of pink himlayan salt

 

Soak the flaxseeds, coconut threads, sunflower and pumpkin seeds together in a medium bowl. You just want to cover the top of the seeds with about an inch of water. Add a bit more water if an hour it’s all soaked up.

In a seperate bowl, soak the dates in warm water.

After the dates and seeds are sufficiently soaked (at least six hours, or overnight), either blend or mash the dates with the coconut oil and salt.

Combine the date paste with the rest of the seeds.

This is your wet candy mixture.

Spread the mixture thinly and evenly onto parchment paper to dry in your dehydrator or oven.

If using a dehydrator, set the temperature to 40 degrees Celsius. The drying time varies, but it will probably take from 12 – 24 hours.

If you don’t have a dehydrator, you can set your oven to the lowest setting which should be around 40 degrees and do the same.

The candy may need to be flipped on the other side once one side is sufficiently dry.

Once it’s ready, cut into bars or squares and store in an airtight jar in the fridge.

Drizzle tahini or peanut butter on top (or mixed in). Add extra pumpkin seeds, cacao nibs, almonds, anything! Get creative…
